Scalloped Meat Balls
This falls in the category of comfort food. The thyme adds such a yummy taste to the meatballs.
6 cups potatoes, sliced, pared
1 cup carrots, sliced, pared
1 medium onion,sliced or diced
2 tsp. salt
2 lbs. ground beef
1/4 cup fine, dry bread crumbs
2/3 cup milk
1/4 tsp. thyme, optional
2 cans cream of mushroom soup
2 cups sour cream
1/2 tsp. paprika

Parboil potatoes, carrots, onions, and 1 tsp. salt in a small amount of boiling water for 5 to 10 minutes. Drain. Mix ground beef with bread, milk, thyme, and remaining salt. Shape into small meatballs. Brown in frying pan. Remove meatballs and set aside. Stir soup, sour cream, and paprika into frying pan. Heat, stirring constantly, just until hot. Layer vegetables, meatballs, and soup mixture into baking dish. Repeat layers. Cover and bake for 30 minutes at 375° or until bubbly hot in center. Serves 8 to 10.

You can also use pre-made frozen meatballs.
