Muffins, fruit or nut


This photo shows muffins with mandarin oranges, a delicious combination with the Streusel topping.

Muffins, fruit or nut
Cream together:
6 Tb. butter or margarine, softened
1/2 - 3/4 cup sugar
1 egg
1/2 cup + 2 Tb. milk
1/2 tsp. vanilla
Mix in:
2 cups chopped fruit, nuts, chocolate chips, etc.
In a separate bowl, sift together:
2 cups flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon, optional

Add the wet ingredients to the dry ingredients. Be careful not to overmix the batter.

Streusel topping, optional
1/4 cup flour
2 Tb. butter or margarine, melted
2 Tb. brown sugar
1/4 tsp. cinnamon
Pinch of nutmeg
Pinch of salt

Mix together and sprinkle on muffins.
Bake for 30-35 minutes in greased tins or tins lined with muffin papers at 350°.

Possible fruit combinations include peach-blueberry, apple-cranberry, mango-banana-chocolate chip, peach-pecan, pear-chocolate chip-almond, pumpkin-apple, pumpkin-pecan-chocolate chip, strawberry-chocolate chip-almond, and so on. For the mandarin oranges drain them well so the muffins don't become soggy. Pour them in a strainer first so they can drain, then follow the recipe.

  1. I once used mandarin oranges canned in juice instead of syrup. The muffins turned out terrible. When I tried again with the ones canned in syrup, they turned out just like the ones Mindy made me, good!!!
