Chow Mein Butterscotch Cookies

Chow Mein Butterscotch Cookies
1 (12 oz.) package butterscotch chips
½ cup peanut butter
6 oz. chow mein noodles (about 4 cups)

Melt the butterscotch chips and peanut butter together (in a microwave or on the top of a double boiler). Pour the melted mixture into the noodles and stir gently. You can add nuts, chocolate chips, or marshmallows if you wish. Spread into a pan and cool before cutting into squares.  Or, you can also form these into little “birds’ nests” and fill them with chocolate eggs for a fun spring-time treat for children.
