Chinese Fried Rice

Chinese Fried Rice
2 cups rice, precooked and chilled (1 cup dry)
2 Tb. vegetable oil
1 (6 oz.) can mushrooms, drained, optional
¼ cup chopped green onions
2 Tb. soy sauce
8 slices cooked crumbled bacon or ½ - 1 cup diced fully cooked ham
2 beaten eggs
Other vegetables as desired

Heat 1 Tb. oil. Cook eggs without stirring until set. Remove and cut into short, narrow strips. Heat remaining oil and cook ham, mushrooms and onion for 3 minutes. Stir in cooked rice and egg strips. Sprinkle with soy sauce and 1 Tb. water. Cook 3 to 5 minutes. Stir occasionally. You can also mix in the raw eggs with the rice and cook all the ingredients together.

Tiffany's Notes: This is a great quick meal--especially if you made too much rice the night before and have leftover rice.  It's easy to customize to what you have on hand.  Leftover ham?  A package of already cooked bacon pieces?  A bag of frozen stir fry vegetables? 

I do like the egg cooked separately and added.  I've also cooked the egg with the rice and it's been okay.
