Chicken with Peanut-Coconut Sauce

½ cup creamy peanut butter
1 cup coconut milk
2 Tb. lime or lemon juice
2 Tb. soy sauce
1½ Tb. brown sugar
1 tsp. ground ginger
2 garlic cloves, minced
½ tsp. red pepper flakes, optional

Mix all the ingredients. Place about ¼ or ½ of the mixture in a container with chicken pieces or chicken strips. Marinate for at least one hour. Grill or broil chicken pieces until done. Use the remaining sauce, warmed to at least room temperature, as a dip for the chicken.

Becky's Note: This is a classic Thai dish (although it is also used in several other countries).  I was hesitant to combine peanut butter and chicken together, but one bite of this amazing dish lays to rest any concerns!
