Fruit Pies with Apple Crisp Topping



Instead of using another crust for the top of a fruit pie, you can top the pie with an Apple Crisp topping. Here is the recipe for the topping:

In a bowl combine:
½ tsp. salt
½ tsp. baking powder
¼ tsp. soda
1 cup brown sugar
1 cup oatmeal
1 cup flour
¾ cup butter or margarine, melted

I used this topping for an apple pie and a peach pie this year for Thanksgiving. It is so delicious! I find that I usually need to add quite a bit more oatmeal than called for in the recipe so that I can sprinkle it onto the fruit (as opposed to dropping blobs of batter all over). If you use this on a pie, I would suggest putting it on for the last 10-15 minutes of baking time rather than at the beginning, or the topping will burn.
