Streusel Topping

6-7 Tbs. butter
1 cup flour
½ cup sugar (white or brown)
¼ tsp. baking powder
¼ tsp. salt, if using unsalted butter
½ tsp. cinnamon, optional
¼ cup pecans or other nuts, finely chopped, optional

Melt the butter. While the butter is cooling a bit, mix dry ingredients. Add the butter to the dry ingredients and stir until blended and the mixture begins to stick together. Squeeze the mixture together into larger balls and then break the large clumps apart into small crumbs. Sprinkle over muffins or cakes. You can freeze leftover streusel for later use.

Note: this is great to use on a Coffee Cake or on Wheat Muffins or any other muffins.

Note 2: If you really squeeze the mixture together and then lightly crumble it, you get a streusel that looks like the stuff you see at the bakeries. I'll look for more photos.
