Pumpkin Cookies

Here's a great cookie for fall--or for anytime of the year!  If you follow this recipe you can make a soft, cake-like pumpkin cookie.
Pumpkin Cookies
1¾ cups pumpkin (1 small can)
½ cup sugar
1½ cup brown sugar
1 cup margarine
2 eggs
3 cups flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1-2 cups chocolate chips
½ cup chopped nuts
1 tsp. cinnamon
½ tsp. ground cloves, optional
½ tsp. nutmeg, optional
2 tsp. ginger, optional

Combine sugars, margarine, eggs and beat well. Add the pumpkin, and blend well. Stir in the dry ingredients. Fold in the chocolate chips and nuts. Drop onto greased baking sheet. Bake at 350° for 10 to 15 minutes.

Tiffany's Note: This cookie isn't extremely photogenic, but it does taste good!  It is one of the favorite cookies in our home.  I've tried both versions--with and without all the extra spices--they are both good.  If you want a spicier cookie add some or all of the optional spices. 

The first time you make them set the timer for the lower time--then add additional minutes of cook time until they are done.  You don't want to under cook them--but of course you don't want a burnt cookie!  Of course, after that first time you'll know how long to cook the other cookies.
